In a stand mixer or hand held, (hand held takes longer) put in your gelatin and 1/2 cup water into the mixing bowl, stir slightly with a spoon.
While it sits, take a sauce pan and put honey, water,
vanilla extract, and salt into the pan.
Heat on medium or medium high heat, mixing constantly,
until you reach a temperature of 240 degrees f. This takes between 6-10 minutes.
Use a candy
thermometer to insure the temp is correct. Once the mixture reaches temp, remove the pan from the heat, slowly and carefully add this to the running stand mixer on low.
Once all is in the
mixer slowly increase the speed on the mixer, being carful not to splash the mixture all over, to high. Once your mixer is on high, let it mix for about 10 minutes or until you have a nice and fluffy consistency.
While it is mixing, spray the molds with baking spray, and an 8 by 8 cake pan. This will keep the peeps from sticking once they are cooled.
After the mix is fluffy, spoon into a pastry bag, (this makes filling your molds easier) take whatever is left and pour it into the 8 by 8 cake pan. Cut into cubed marshmallows later.
After you have filled your pans, let them sit for at least 4-5 hours to let them set properly. Now you can remove the peeps from the molds, they will still be sticky, so take a cutting board, and dust it with coconut flour.
Lightly tap the peeps into the coconut flour to help coat the sticky parts.
You and your dog can enjoy this treat together. Remember however it is a treat!
